Does gelatin and water form a true solution, or is the gelatin in a colloidal state?

This is after the gelatin was heated until it liquified and is left to sit for about a week.Does gelatin and water form a true solution, or is the gelatin in a colloidal state?
Gelatins are typically colloids. The molecules on the gelatin are emulsified using heat. As the mixture cools, the gelatin molecule begin forming an expanded crystal lattice structure which traps or incorporates the water in which it is sitting. This gives the mixture its resultant rigidity (think of jello). However, the structure is too weak to bear much stress and breaks down when a relatively small force is applied. This is why jello can be converted back to a liquid simply by smashing and mixing it for a while.
